How To Make Lighter Chicken Kiev
A healthier twist on the classic Chicken Kiev, with less fat and calories.
Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup reduced-fat butter, softened
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup whole wheat bread crumbs
- 2 tablespoons grated Parmesan cheese
- Olive oil cooking spray
Instructions

Preheat the oven to 400°F (200°C) and lightly grease a baking sheet.

In a small bowl, combine the softened butter, minced garlic, chopped parsley, salt, and black pepper.

Use a sharp knife to cut a slit into the side of each chicken breast, creating a pocket.

Stuff each chicken breast with about 1 tablespoon of the butter mixture.

In a separate bowl, mix together the bread crumbs and Parmesan cheese.

Dip each stuffed chicken breast into the bread crumb mixture, pressing lightly to coat.

Place the breaded chicken breasts onto the prepared baking sheet.

Lightly spray the tops of the chicken breasts with olive oil cooking spray.

Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and the bread crumbs are golden brown.
