How To Make Star Anise and Chocolate Mousse Recipe
A decadent mousse infused with the exotic flavors of star anise and rich chocolate.

Ingredients
- 1 cup heavy cream
- 2 tablespoons sugar
- 2 star anise pods
- 4 ounces semisweet chocolate, chopped
- 2 egg yolks
- 1/4 teaspoon salt

In a small saucepan, combine the heavy cream, sugar, and star anise. Heat over low heat until the sugar has dissolved, then bring to a gentle simmer and let steep for 10 minutes.

Remove from heat and strain the mixture through a fine-mesh sieve into a medium bowl. Add the chopped chocolate to the bowl and whisk until smooth.

In a separate bowl, whisk together the egg yolks and salt until light and frothy. Gradually whisk in the chocolate mixture until well combined.

In a large bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no white streaks remain.

Divide the mousse evenly among 4 small serving dishes or ramekins. Chill in the refrigerator for at least 1 hour, or until set.
