Serves:

Ingredients

  • 500g ripe plums, pitted and chopped
  • 1/2 cup white sugar
  • 2 star anise pods
  • 1 tbsp lemon juice

Instructions

  1. In a medium saucepan, combine the plums, sugar, and star anise pods.

  2. Cook over medium heat, stirring occasionally, until the plums break down and the mixture thickens (about 45 minutes).

  3. Remove from heat and stir in lemon juice.

  4. Remove the star anise pods and discard.

  5. Transfer the jam to a jar and let it cool to room temperature before refrigerating.

  6. Serve as desired.
