Ingredients

  • 12 oz linguine pasta
  • 1 cup fresh tarragon leaves
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chopped walnuts
  • 3 garlic cloves
  • 1/2 cup olive oil
  • Salt and black pepper to taste
  • 1 lb peeled and deveined shrimp

Instructions

  1. Cook the linguine pasta according to package directions until al dente.

  2. In a food processor, combine tarragon, parmesan cheese, walnuts, garlic, olive oil, salt, and black pepper. Pulse until smooth.

  3. In a saucepan, sauté the shrimp until cooked through, then add the pesto and heat through.

  4. Toss the cooked pasta with the tarragon pesto and shrimp.

  5. Serve hot with additional grated parmesan cheese on top.
