Ingredients

  • 1 bunch asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 cup snap peas, trimmed
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 lemon, juiced
  • Fresh herbs (such as basil, parsley, or mint) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large baking dish, combine the asparagus, cherry tomatoes, snap peas, red onion, and garlic. Drizzle with olive oil and season with salt and pepper.

  3. Roast in the preheated oven for 15 minutes, or until the vegetables are tender and slightly golden.

  4. Remove from the oven and squeeze the lemon juice over the vegetables. Toss gently to combine.

  5. Garnish with fresh herbs before serving.
