Ingredients

  • 4 cups of broccoli florets
  • 4 tbsp of butter
  • 2 garlic cloves, minced
  • 1/4 cup of almond flour
  • 2 cups of vegetable broth
  • 1 cup of heavy cream
  • 2 cups of shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a pot, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes.

  2. Add the almond flour and whisk until smooth. Gradually pour in the vegetable broth while whisking continuously.

  3. Add the broccoli florets, salt, and pepper. Cook for 15 minutes or until the broccoli is tender.

  4. Use an immersion blender to puree the soup until smooth.

  5. Reduce heat to low and add the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and the soup is creamy.

  6. Serve hot and enjoy!
