How To Make Broccoli Soup with Crispy Croutons & Goat’s Cheese

Ingredients
- 2 heads of broccoli, cut into florets
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- Salt and pepper to taste
- 4 slices of bread, cubed
- Olive oil for drizzling
- 1/2 cup goat’s cheese, crumbled
Instructions

In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the broccoli florets to the pot and cook for 5 minutes until slightly tender.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes until the broccoli is fully cooked.

Using an immersion blender or regular blender, blend the soup until smooth. Stir in the milk and season with salt and pepper to taste.

In the meantime, preheat the oven to 400°F (200°C). Toss the bread cubes with some olive oil, salt, and pepper. Spread them out on a baking sheet and bake for 10 minutes until crispy.

Ladle the soup into bowls and sprinkle with the crispy croutons and crumbled goat’s cheese.
