Ingredients

  • 4 cups chopped broccoli
  • 3 tbsp butter
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, melt the butter over medium heat.

  2. Add the diced onion and minced garlic and sauté for 2-3 minutes, until softened.

  3. Add the chopped broccoli and chicken broth to the pot and bring to a boil.

  4. Reduce the heat to low and simmer for 15-20 minutes, until the broccoli is tender.

  5. Using an immersion blender or regular blender, puree the soup until smooth.

  6. Return the soup to the pot and stir in the heavy cream, salt, and black pepper.

  7. Heat over medium-low heat until heated through.

  8. Stir in the shredded cheddar cheese until melted.

  9. Serve hot, garnished with additional shredded cheese if desired.
