This dish is a delicious and healthy low carb alternative to traditional pasta.

Ingredients
- 4 medium zucchini
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 2 tbsp chopped fresh basil
- 1/4 cup grated Parmesan cheese
Instructions

Cut the ends off the zucchini and spiralize them into noodles.

Heat the olive oil in a large skillet over medium heat.

Add the cherry tomatoes, garlic, and red pepper flakes (if using).

Cook for 2-3 minutes, until the tomatoes start to soften.

Add the zucchini noodles to the skillet and toss well to coat in the tomato mixture.

Cook for 3-4 minutes, until the zucchini noodles are tender.
