How To Make Vegetarian Low Carb Zucchini Noodles Recipe

This dish is a delicious and healthy low carb alternative to traditional pasta.

Serves:

Ingredients

  • 4 medium zucchini
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh basil
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cut the ends off the zucchini and spiralize them into noodles.

  2. Heat the olive oil in a large skillet over medium heat.

  3. Add the cherry tomatoes, garlic, and red pepper flakes (if using).

  4. Cook for 2-3 minutes, until the tomatoes start to soften.

  5. Add the zucchini noodles to the skillet and toss well to coat in the tomato mixture.

  6. Cook for 3-4 minutes, until the zucchini noodles are tender.

  7. Season with salt and pepper, to taste.

  8. Serve hot, topped with the chopped fresh basil and grated Parmesan cheese.
