Ingredients

  • 2 bell peppers, diced into bite-size pieces
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, diced into bite-size pieces
  • 8-10 cherry tomatoes
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Wooden skewers

Instructions

  1. Soak wooden skewers in water for at least 30 minutes.

  2. Preheat grill to medium-high heat.

  3. Assemble skewers by threading bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes onto each skewer.

  4. In a small bowl, whisk together olive oil, garlic, dried basil, dried oregano, salt, and pepper.

  5. Brush seasoning mixture over each skewer.

  6. Place skewers on the grill and cook for 8-10 minutes, turning occasionally, until veggies are tender and lightly charred.

  7. Serve hot.
