  • 1 zucchini, sliced into rounds
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, garlic powder, salt, and pepper.

  3. Thread the vegetables onto skewers, alternating between the zucchini, bell pepper, onion, and cherry tomatoes.

  4. Brush the vegetable skewers with the marinade.

  5. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.

  6. Remove the skewers from the grill and serve hot.
