- 4 burger buns
- 1 cup shredded carrot
- 1/4 cup apple cider vinegar
- 1 tbsp sugar

- 1/2 cup mayonnaise
- 2 tbsp dijon mustard
- 4 lettuce leaves
- 4 tomato slices
- 4 red onion slices
- Salt and pepper, to taste
Instructions

Preheat the grill or stovetop pan to medium-high heat.

In a bowl, combine shredded carrot, apple cider vinegar, sugar, and salt. Let it sit for at least 15 minutes to pickle.

Grill or cook veggie burger patties according to package instructions.

Toast burger buns on the grill or stovetop until lightly golden.

In a small bowl, mix mayonnaise and dijon mustard together.
