Ingredients

  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, diced
  • 8 cherry tomatoes
  • 8 wooden skewers
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Soak skewers in water for at least 30 minutes.

  2. Preheat grill to medium-high heat.

  3. Alternately thread the bell peppers, red onion, and cherry tomatoes onto skewers.

  4. Brush the skewers with olive oil and sprinkle with salt and black pepper.

  5. Grill the skewers for 10-15 minutes, turning occasionally until the vegetables are charred.

  6. Remove the skewers from the grill and serve hot.
