How To Make Soft Herb Scrambled Egg with Asparagus

- 8 large eggs
- 1/4 cup chopped fresh herbs (such as parsley, chives, and dill)
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bunch asparagus, ends trimmed
- 2 tbsp olive oil
Instructions

In a mixing bowl, whisk together eggs, herbs, milk, salt, and black pepper.

Heat olive oil in a large non-stick skillet over medium heat.

Add asparagus to the skillet and cook for 4-5 minutes until tender-crisp. Remove from skillet and set aside.

Pour the egg mixture into the skillet and cook, stirring gently, until soft and scrambled, about 3-4 minutes.

Divide the scrambled eggs onto plates and serve with cooked asparagus on the side.
