Ingredients

  • 8 large eggs
  • 1/4 cup chopped fresh herbs (such as parsley, chives, and dill)
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 bunch asparagus, ends trimmed
  • 2 tbsp olive oil

Instructions

  1. In a mixing bowl, whisk together eggs, herbs, milk, salt, and black pepper.

  2. Heat olive oil in a large non-stick skillet over medium heat.

  3. Add asparagus to the skillet and cook for 4-5 minutes until tender-crisp. Remove from skillet and set aside.

  4. Pour the egg mixture into the skillet and cook, stirring gently, until soft and scrambled, about 3-4 minutes.

  5. Divide the scrambled eggs onto plates and serve with cooked asparagus on the side.
