How To Make Halloumi Aubergine Burgers with Harissa Relish
A delicious and flavorful vegetarian burger made with grilled halloumi cheese, roasted aubergine, and a spicy harissa relish.

Ingredients
- 4 halloumi cheese slices
- 2 large aubergines, sliced
- 4 burger buns
- 1/4 cup harissa paste
- 2 tbsp olive oil
- 1 red onion, sliced
- 1 tomato, sliced
- Handful of fresh lettuce leaves
- Salt and pepper to taste
Instructions

Preheat grill or barbecue to medium heat.

Brush the aubergine slices with olive oil and sprinkle with salt and pepper.

Grill the aubergine slices for 4-5 minutes on each side until they are tender and have grill marks. Set aside.

Grill the halloumi cheese slices for 1-2 minutes on each side until they are golden brown. Set aside.

Toast the burger buns on the grill for a minute until they are lightly toasted.

Spread harissa paste on the bottom half of each burger bun.

Place a grilled aubergine slice on top of the harissa paste.

Layer with a grilled halloumi cheese slice, sliced red onion, tomato, and lettuce leaves.

Season with salt and pepper to taste.

Place the top half of the burger bun on the filling.
