Ingredients
- 2 large aubergines, sliced lengthwise
- 1/4 cup olive oil
- Salt and pepper, to taste
- 1 cup hummus
- 1/4 cup chopped fresh parsley
- Lemon wedges, for serving
Instructions

Preheat the grill to medium-high heat.

Brush the aubergine slices with olive oil on both sides and season with salt and pepper.

Grill the aubergine slices for about 5 minutes per side, until they are tender and have grill marks.

Remove the grilled aubergines from the grill and let them cool slightly.

Spread a generous amount of hummus on each grilled aubergine slice.

Garnish with chopped parsley.
