Ingredients

  • 2 large aubergines, sliced lengthwise
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1 cup hummus
  • 1/4 cup chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat.

  2. Brush the aubergine slices with olive oil on both sides and season with salt and pepper.

  3. Grill the aubergine slices for about 5 minutes per side, until they are tender and have grill marks.

  4. Remove the grilled aubergines from the grill and let them cool slightly.

  5. Spread a generous amount of hummus on each grilled aubergine slice.

  6. Garnish with chopped parsley.

  7. Serve the aubergine & hummus grills with lemon wedges.
