Ingredients
- 2 large aubergines, sliced into rounds
- 4 cups of watermelon, cubed
- 2 tbsp sesame seeds
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper, to taste
- Fresh mint leaves, for garnish
Instructions

Heat a grill or grill pan over medium heat.

Season the aubergine slices with salt and set aside for 10 minutes to remove excess moisture.

Pat the aubergine slices dry with paper towels and brush with olive oil.

Grill the aubergine slices for 3-4 minutes per side, until charred and softened. Set aside to cool.

In a large bowl, combine the grilled aubergine, watermelon, and sesame seeds.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Drizzle the dressing over the salad and toss gently to combine.

Garnish with fresh mint leaves before serving.
