Ingredients

  • 2 large aubergines, sliced into rounds
  • 1 cup of tomato sauce
  • 1 cup of mozzarella cheese, grated
  • 1/4 cup of fresh basil leaves
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.

  2. Brush the aubergine slices with olive oil and sprinkle with salt and pepper.

  3. Grill the aubergine slices for about 2-3 minutes on each side, until they are tender and lightly charred.

  4. In a baking dish, spread a layer of tomato sauce, followed by a layer of grilled aubergine slices.

  5. Sprinkle some minced garlic, grated mozzarella cheese, and torn basil leaves over the aubergine slices.

  6. Repeat the layers until all the ingredients are used, finishing with a layer of tomato sauce on top.

  7. Place the baking dish on the grill and cook for about 10 minutes, or until the cheese is melted and bubbly.

  8. Serve the grilled aubergine stacks hot, garnished with fresh basil leaves.
