How To Make Aubergine & Tomato Grill

Ingredients
- 2 large aubergines, sliced into thick rounds
- 4 large tomatoes, sliced
- 4 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions

Preheat the grill to medium-high heat.

In a small bowl, mix together the olive oil, minced garlic, dried oregano, salt, and pepper.

Brush both sides of the aubergine slices and tomato slices with the olive oil mixture.

Place the aubergine slices and tomato slices on the grill and cook for about 5-7 minutes on each side, until they are nicely grilled and softened.

Remove the grilled aubergine and tomatoes from the grill and arrange them on a serving platter.

Garnish with fresh basil leaves.
