How To Make Grilled Aubergine with Creamy Dressing

- 2 large aubergines
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 2 tbsp chopped fresh parsley
Instructions

Preheat grill to medium heat.

Slice the aubergines into 1/4 inch thick rounds.
