  • 2 large aubergines
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat grill to medium heat.

  2. Slice the aubergines into 1/4 inch thick rounds.

  3. Brush the aubergine slices with olive oil and season with salt and pepper.

  4. Grill the aubergine slices for 4-5 minutes per side, until tender and charred.

  5. In a small bowl, whisk together the Greek yogurt, lemon juice, minced garlic, and chopped parsley.

  6. Serve the grilled aubergine slices with the creamy dressing drizzled on top.
