Ingredients

  • 4 corn tortillas
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt, to taste
  • 1 cup crumbled feta cheese
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Place the corn tortillas on a baking sheet and bake for 5-7 minutes, until crispy.

  2. In a bowl, toss the bell pepper, zucchini, and red onion with olive oil, chili powder, cumin, garlic powder, and salt.

  3. Spread the vegetables on a separate baking sheet and roast for 15-20 minutes, until tender and slightly charred.

  4. Remove the tortillas from the oven and top each with a portion of the roasted vegetables.

  5. Sprinkle the feta cheese over the vegetables and return to the oven for 5 minutes, until the cheese is melted.

  6. Garnish with fresh cilantro and serve with lime wedges.
