How To Make Spicy Bean & Avocado Tostados

Serves:

Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 tsp of olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of chili powder
  • 1/2 tsp of cumin
  • 1/4 tsp of cayenne pepper (optional for extra spice)
  • Salt and pepper to taste
  • 4 tostada shells
  • 1 avocado, sliced
  • 1/4 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the black beans, chili powder, cumin, cayenne pepper (if using), salt, and pepper to the skillet. Stir well to combine and cook for another 5 minutes, until the beans are heated through.

  3. To assemble the tostados, spread a layer of the bean mixture onto each tostada shell. Top with sliced avocado, diced tomatoes, and chopped cilantro.

  4. Serve the tostados with lime wedges on the side for squeezing over the top.

  5. Enjoy!
