Ingredients
- 1 small cabbage, sliced into wedges
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 can butter beans, drained and rinsed
- 2 tbsp harissa paste
- 2 tbsp butter
- 1 lemon, zest and juice
- 200g feta cheese, sliced into thick slabs
- Fresh parsley, for garnish

Preheat the oven to 425F (220C).

Place the cabbage wedges on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes or until the edges are crispy and browned.

In a large skillet, heat olive oil over medium heat. Add the butter beans and harissa paste. Cook for 5 minutes, stirring occasionally, until the beans are heated through and coated in the harissa.

In a separate oven-proof dish, place the feta cheese slices and drizzle with olive oil. Bake for 10 minutes or until the cheese is soft and slightly golden.

To serve, arrange the roasted cabbage on a platter. Top with the harissa butter beans and baked feta. Sprinkle with lemon zest and juice. Garnish with fresh parsley.
