How To Make Butternut Squash & Goat’s Cheese Spaghetti

Ingredients
- 1 butternut squash, peeled, seeded, and cubed
- 8 oz spaghetti
- 4 oz goat’s cheese
- 1/4 cup olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

Place the cubed butternut squash on a baking sheet and drizzle with 2 tablespoons of olive oil. Season with salt and pepper. Roast in the preheated oven for about 20 minutes or until tender and slightly caramelized.

Cook the spaghetti according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the roasted butternut squash to the skillet and gently mash it with the back of a spoon. Stir to combine with the garlic and olive oil.

Add the cooked spaghetti to the skillet and toss to coat the pasta with the butternut squash mixture.

Crumble the goat’s cheese over the pasta and stir until melted and creamy.

Season with salt and pepper to taste.

Serve the butternut squash and goat’s cheese spaghetti hot, garnished with fresh parsley.
