How To Make Coconut Oil Roasted Vegetables Recipe

Ingredients
- 1 large sweet potato, chopped
- 1 large red bell pepper, chopped
- 1 large zucchini, chopped
- 1 large yellow squash, chopped
- 1 large red onion, chopped
- 3 cloves of garlic, minced
- 4 tbsp of coconut oil
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1/2 tsp of dried thyme
Instructions

Preheat oven to 425 degrees F (220 degrees C).

In a large bowl, mix together chopped sweet potato, red bell pepper, zucchini, yellow squash, red onion, and minced garlic.

Add coconut oil, salt, black pepper, and dried thyme to the bowl and mix until the vegetables are evenly coated.

Spread the vegetable mixture on a large baking sheet in an even layer.
