Ingredients

  • 4 large potatoes, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the potato chunks in a large pot of salted water. Bring to a boil and cook for 5 minutes. Drain well.

  3. In a large mixing bowl, combine the olive oil, paprika, salt, and pepper. Add the drained potatoes and toss until well coated.

  4. Transfer the potatoes to a baking sheet and spread them out in a single layer.

  5. Roast in the preheated oven for 40-45 minutes, turning halfway through, until the potatoes are golden and crispy.

  6. Remove from the oven and sprinkle with fresh parsley.

  7. Serve hot and enjoy!
