How To Make Real Tomato Soup

Serves:

Ingredients

  • 8 large tomatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.

  2. Add the diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

  3. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.

  4. Return the soup to the pot and heat over medium heat until warmed through. Season with additional salt and pepper if needed.

  5. Serve hot and enjoy!
