How To Make Ravioli with Artichokes, Leek & Lemon

Serves:

Ingredients

  • 1 package of cheese or spinach ravioli
  • 1 tablespoon of olive oil
  • 1 leek, thinly sliced
  • 2 cloves of garlic, minced
  • 1 can of artichoke hearts, drained and chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the ravioli according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the leek and garlic, and sauté until softened.

  3. Add the chopped artichoke hearts and lemon zest to the skillet. Cook for an additional 2-3 minutes.

  4. Add the cooked ravioli to the skillet and toss gently to combine.

  5. Pour the lemon juice over the ravioli mixture and stir well. Cook for another 2-3 minutes to allow the flavors to meld.

  6. Sprinkle the grated Parmesan cheese over the top and season with salt and pepper to taste. Stir until the cheese is melted and everything is well coated.

  7. Serve the ravioli with artichokes, leek, and lemon in bowls, garnished with fresh parsley.
