Ingredients

  • 4 large artichokes
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the stems. Cut off the top third of each artichoke.

  2. In a large pot, bring salted water to a boil. Cook the artichokes for 15-20 minutes, or until the base is tender when pierced with a fork. Drain and set aside.

  3. In a shallow dish, combine the flour, Parmesan cheese, salt, and pepper. In another dish, place the beaten eggs.

  4. Dip each artichoke in the egg mixture, then coat with the flour mixture, pressing gently to adhere.

  5. Heat vegetable oil in a deep skillet or pot over medium heat. Fry the coated artichokes until golden brown and crispy, about 5 minutes per side. Drain on paper towels.

  6. Serve the artichokes hot, sprinkled with chopped parsley and accompanied by lemon wedges for squeezing over the top.
