How To Make Leek & Globe Artichoke Pie

Ingredients
- 1 leek, thinly sliced
- 1 globe artichoke, chopped
- 3 tbsp olive oil
- 1 garlic clove, minced
- 1/2 cup vegetable broth
- 1 cup grated cheese (such as Gruyere or Cheddar)
- 2 eggs
- 1/4 cup milk
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 prepared pie crust
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the leek and garlic and sauté until softened, about 5 minutes.

Add the chopped artichoke and vegetable broth to the skillet. Cook for another 5 minutes until the artichokes are tender. Remove from heat and let cool slightly.

In a separate bowl, whisk together the eggs, milk, dried thyme, salt, and pepper.

Roll out the pie crust and fit it into a pie dish.

Spread the leek and artichoke mixture evenly over the bottom of the pie crust. Sprinkle the grated cheese over the top.

Pour the egg mixture over the filling, ensuring it is evenly distributed.
