Ingredients

  • 4 large artichokes
  • 4 cloves of garlic, minced
  • 4 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.

  2. Trim the artichokes by removing the tough outer leaves and trimming the top.

  3. Cut the artichokes in half lengthwise and using a spoon, scoop out the hairy choke.

  4. In a small bowl, mix together the minced garlic, olive oil, lemon juice, salt, and pepper.

  5. Brush the garlic mixture onto the cut side of each artichoke half.

  6. Place the artichokes cut side down on the grill and cook for about 10-12 minutes, or until tender.

  7. Flip the artichokes and grill for an additional 5-8 minutes, or until lightly charred.

  8. Remove from the grill and garnish with chopped parsley.

  9. Serve hot and enjoy!
