Ingredients

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup sliced black olives
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
