Ingredients

  • 1 tbsp oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 cup fresh peas
  • 500g new potatoes, boiled and peeled
  • 1 cup tomato puree
  • 1 cup vegetable broth
  • Salt to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.

  2. Add chopped onions, minced garlic, and grated ginger. Cook until onions are translucent.

  3. Add coriander powder, turmeric powder, and red chili powder. Mix well.

  4. Add fresh peas and boiled new potatoes. Cook for a few minutes.

  5. Pour in tomato puree and vegetable broth. Stir to combine.

  6. Season with salt and let the curry simmer for 15-20 minutes on low heat.

  7. Garnish with fresh cilantro before serving.
