Ingredients

  • 1 tbsp oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 tbsp curry powder
  • 1/2 tsp cumin powder
  • 1 can (14 oz) coconut milk
  • 2 cups green peas, frozen or fresh
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup cilantro leaves, chopped

Instructions

  1. In a large skillet, heat oil over medium heat. Add onion and sauté for 5 minutes until softened.

  2. Add garlic, ginger, curry powder, and cumin powder to the skillet. Cook for 1 minute.

  3. Stir in coconut milk and bring to a simmer.

  4. Add green peas, salt, and black pepper to the skillet. Cover and cook for 10-15 minutes, stirring occasionally, until the peas are cooked and the sauce has thickened.

  5. Garnish with chopped cilantro leaves and serve with rice or naan bread.
