Ingredients

  • 4 medium sweet potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the olive oil, paprika, cayenne pepper, garlic powder, salt, and black pepper.

  3. Add the sweet potato cubes to the bowl and toss until evenly coated with the spice mixture.

  4. Spread the sweet potatoes in a single layer on the prepared baking sheet.

  5. Roast in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy on the edges.

  6. Remove from the oven and garnish with chopped fresh parsley, if desired.

  7. Serve hot and enjoy!
