Ingredients

  • 4 large potatoes, washed and cut into bite-sized chunks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, dried thyme, cayenne pepper, salt, and black pepper. Mix well.

  3. Add the potato chunks to the bowl and toss until they are evenly coated with the spice mixture.

  4. Arrange the potatoes in a single layer on a baking sheet.

  5. Roast in the preheated oven for about 40-45 minutes, or until the potatoes are crispy and golden brown, turning them halfway through cooking.

  6. Remove from the oven and sprinkle with chopped fresh parsley before serving.
