How To Make Spicy Pies with Sweet Potato Mash

Serves:

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato paste
  • 1 cup beef broth
  • 1 cup frozen peas and carrots
  • 2 cups cooked sweet potatoes, mashed
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat some oil over medium heat and sauté the onion and garlic until fragrant.

  2. Add the ground beef and cook until browned, breaking it up with a spoon.

  3. Stir in the cumin powder, paprika, chili powder, salt, and black pepper. Cook for another minute.

  4. Add the tomato paste and beef broth. Bring to a simmer and cook for 10 minutes.

  5. Stir in the frozen peas and carrots and cook for another 5 minutes.

  6. In a separate pot, heat the mashed sweet potatoes with milk and butter until warmed through. Season with salt and pepper.

  7. Preheat the oven to 375°F (190°C).

  8. Divide the beef mixture into 4 individual pie dishes or ramekins. Top with the sweet potato mash.

  9. Bake for 15-20 minutes, or until the pies are golden and bubbling.

  10. Serve hot and enjoy!
