Ingredients

  • 500g potatoes, peeled and chopped
  • 1 onion, finely chopped
  • 200g cheddar cheese, grated
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 200ml double cream
  • 2 eggs
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Boil the potatoes in salted water until tender. Drain and mash them.

  3. Heat the olive oil in a pan and sauté the onions and garlic until soft and golden.

  4. In a bowl, mix the mashed potatoes, sautéed onions and garlic, grated cheese, double cream, and eggs. Season with salt and pepper.

  5. Transfer the mixture into a pie dish and smooth the top with a fork.

  6. Bake in the preheated oven for 40 minutes, or until the top is golden and the pie is set.

  7. Garnish with fresh parsley before serving.
