Ingredients
- 2 cups cooked rice
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon chili powder (optional for extra heat)
- 2 smoked haddock fillets, flaked
- 4 boiled eggs, peeled and quartered
- Fresh cilantro, for garnish
- Salt and pepper to taste
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sauté until softened.

Add the curry powder, turmeric, cumin, coriander, paprika, and chili powder (if using). Stir well to coat the onions and garlic with the spices.

Add the cooked rice to the skillet and mix well with the spiced onions. Cook for a few minutes to allow the flavors to blend.

Stir in the flaked smoked haddock and quartered boiled eggs. Season with salt and pepper to taste. Cook for an additional 5 minutes until the fish is heated through.

Serve the quick curried kedgeree hot, garnished with fresh cilantro.
