Serves:

Ingredients

  • 4 slices of bread
  • 2 cups of broccoli florets
  • 4 boiled eggs
  • 1 tbsp of vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of curry powder
  • Salt and pepper to taste

Instructions

  1. Toast the slices of bread and set aside.

  2. In a large pan, heat the vegetable oil over medium heat.

  3. Add the diced onion and minced garlic, sauté until golden brown.

  4. Add the curry powder and stir for 1 minute.

  5. Add the broccoli florets and cook for 5-7 minutes, until tender.

  6. Season with salt and pepper to taste.

  7. While the broccoli is cooking, slice the boiled eggs.

  8. Place the toasted bread on serving plates.

  9. Divide the curried broccoli mixture evenly onto the bread slices.

  10. Top each slice with sliced boiled eggs.

  11. Serve warm.
