How To Make Parsnip Gnocchi

Ingredients
- 2 large parsnips, peeled and diced
- 1 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup chopped fresh parsley
Instructions

Cook the parsnips in a large pot of boiling water until tender, about 10 minutes. Drain and let cool slightly.

In a large bowl, mash the parsnips until smooth. Add the flour, Parmesan cheese, salt, black pepper, and beaten egg. Mix well to combine.

On a lightly floured surface, divide the dough into 4 equal parts. Roll each part into a long rope, about 1/2 inch thick. Cut the ropes into 1-inch long pieces.

Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the cooked gnocchi and stir to coat in the garlic oil.

Pour the heavy cream into the skillet and simmer for 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.

Serve the parsnip gnocchi hot, topped with chopped fresh parsley.
