How To Make Steamed Mussels with Cider, Spring Onions & Cream

Ingredients
- 2 pounds mussels, cleaned and debearded
- 1 cup apple cider
- 1/2 cup heavy cream
- 4 spring onions, chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

In a large pot, melt the butter over medium heat. Add the spring onions and cook until softened, about 2 minutes.

Pour in the apple cider and bring to a simmer.

Add the mussels to the pot and cover with a lid. Steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

Remove the mussels from the pot and set them aside.

Increase the heat to high and add the heavy cream to the pot. Bring to a boil and cook for 2-3 minutes, or until slightly thickened.

Season the sauce with salt and pepper to taste.

Pour the sauce over the mussels and garnish with chopped parsley.
