  • 4 parsnips, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Chopped fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and garlic, cooking until they are softened and fragrant.

  2. Add the curry powder and cumin, stirring for about a minute until fragrant.

  3. Add the diced parsnips and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the parsnips are tender.

  4. Using an immersion blender or regular blender, puree the soup until smooth.

  5. Return the soup to the pot and stir in the coconut milk. Season with salt and pepper to taste.

  6. Serve the soup in shot glasses or small cups, garnished with chopped fresh cilantro.
