- 4 parsnips, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tbsp curry powder
- 1 tsp cumin
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- Chopped fresh cilantro, for garnish

In a large pot, heat some oil over medium heat. Add the onions and garlic, cooking until they are softened and fragrant.
