How To Make Spiced Pea & Courgette Fritters with Minty Yogurt Dip

Ingredients
- 1 cup fresh or frozen peas
- 1 medium courgette, grated
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp chili flakes (optional for some heat)
- 1/2 cup plain flour
- 1/2 tsp baking powder
- Salt and pepper to taste
- Vegetable oil for frying
- for the minty yogurt dip:
- 1 cup plain yogurt
- 2 tbsp fresh mint leaves, finely chopped
- 1 tbsp lemon juice
- Salt to taste
Instructions

In a large mixing bowl, combine the peas, grated courgette, chopped onion, minced garlic, ground cumin, ground coriander, and chili flakes (if using).

Add the flour and baking powder to the vegetable mixture. Season with salt and pepper. Mix well until everything is evenly combined.

Heat vegetable oil in a frying pan over medium heat. Once the oil is hot, scoop a spoonful of the fritter mixture and gently place it in the pan. Flatten it slightly with the back of the spoon. Repeat with the remaining mixture, leaving enough space in between each fritter.

Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the pan and drain on a paper towel-lined plate.

While the fritters are cooking, prepare the minty yogurt dip. In a small bowl, mix together the plain yogurt, chopped mint leaves, lemon juice, and salt to taste.

Serve the spiced pea & courgette fritters hot with the minty yogurt dip on the side.
