Ingredients

  • 1 cup oats
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup grated cheddar cheese
  • 1/4 cup butter, melted
  • 1/4 cup milk
  • 1/4 cup soft cheese (such as goat cheese or cream cheese)
  • 1 cup grapes, halved

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine oats, flour, baking powder, and salt.

  3. Add grated cheddar cheese and melted butter to the dry ingredients. Mix well until crumbly.

  4. Gradually add milk while stirring until a dough forms.

  5. Roll out the dough on a lightly floured surface until it’s about 1/4 inch thick.

  6. Use a round cutter to cut out oatcakes and place them on the prepared baking sheet.

  7. Bake for 12-15 minutes or until golden brown.

  8. Let the oatcakes cool slightly, then spread a dollop of soft cheese on each one.

  9. Top with halved grapes and serve.
