How To Make Bean & feta spread with Greek salad salsa & oatcakes

Ingredients
- 1 can of cannellini beans, drained and rinsed
- 100g feta cheese, crumbled
- 2 tbsp lemon juice
- 1 clove of garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 small cucumber, diced
- 1 small red bell pepper, diced
- 1/4 red onion, finely chopped
- 10 cherry tomatoes, quartered
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 10 oatcakes
Instructions

In a food processor, blend the cannellini beans, feta cheese, lemon juice, garlic, olive oil, salt, and pepper until smooth.

In a medium bowl, combine the cucumber, red bell pepper, red onion, cherry tomatoes, parsley, mint, lemon juice, extra virgin olive oil, salt, and pepper. Mix well to combine.

Serve the bean and feta spread with the Greek salad salsa and oatcakes on the side.
