Ingredients

  • 1 cup oats
  • 1/2 cup walnuts, chopped
  • 1/4 cup raisins
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine oats, walnuts, raisins, maple syrup, almond milk, cinnamon, and vanilla extract. Stir well to combine.

  3. Scoop out about ¼ cup of the mixture and shape it into a round flat cake. Place it on the prepared baking sheet. Repeat with the remaining mixture.

  4. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

  5. Remove from the oven and let the oatcakes cool on a wire rack before serving.
