How To Make Staffordshire Oatcakes with Mushrooms

Ingredients
- 1 cup oats
- 1 cup plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 1 tbsp butter
- 8 oz mushrooms, sliced
- 1 garlic clove, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large bowl, mix together oats, flour, baking powder, and salt.

In a separate bowl, whisk together milk and eggs. Pour into the oat mixture and stir until well combined.

Heat a non-stick pan over medium heat. Add a small amount of butter and pour about 1/4 cup of the batter into the pan. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with the remaining batter to make more oatcakes.

In a separate pan, heat olive oil over medium heat. Add garlic and mushrooms, season with salt and pepper, and sauté until mushrooms are tender and golden brown.

Place a spoonful of the mushroom mixture onto each oatcake and fold in half. Garnish with fresh parsley.
