How To Make Turkey Bubble & Squeak

We have turkey sandwiched between lovely bread, baked as pie filling, and cooked in a casserole. Whatever way it’s served, turkey meat is a versatile dish you just can’t get enough of.

Ingredients
- 2 cups leftover turkey, shredded
- 2 cups mashed potatoes
- 1 cup cooked Brussels sprouts, chopped
- 1/2 cup cooked carrots, diced
- 1/2 cup cooked peas
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions

In a large mixing bowl, combine the shredded turkey, mashed potatoes, Brussels sprouts, carrots, peas, onion, garlic, dried thyme, salt, and pepper. Mix well.

Heat the vegetable oil in a large skillet over medium heat. Form the turkey mixture into patties and place them in the skillet. Cook for about 4-5 minutes on each side or until golden brown and crispy.

Serve the Turkey Bubble & Squeak hot with a side of cranberry sauce or gravy.
