How To Make Turkey Bubble & Squeak

Ingredients

  • 2 cups leftover turkey, shredded
  • 2 cups mashed potatoes
  • 1 cup cooked Brussels sprouts, chopped
  • 1/2 cup cooked carrots, diced
  • 1/2 cup cooked peas
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large mixing bowl, combine the shredded turkey, mashed potatoes, Brussels sprouts, carrots, peas, onion, garlic, dried thyme, salt, and pepper. Mix well.

  2. Heat the vegetable oil in a large skillet over medium heat. Form the turkey mixture into patties and place them in the skillet. Cook for about 4-5 minutes on each side or until golden brown and crispy.

  3. Serve the Turkey Bubble & Squeak hot with a side of cranberry sauce or gravy.
