Ingredients

  • 2 cans of black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 tbsp of chopped fresh cilantro
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine black beans, red bell pepper, green bell pepper and red onion.

  2. Add olive oil, lime juice, cilantro and mix until well combined.

  3. Add salt and pepper to taste.

  4. Gently fold in avocado.

  5. Serve chilled or at room temperature.
